Hi all, I’m a teacher hoping to get organised for when I go back. I normally have frittata or something egg based for breakfast. Has anybody got any ideas for lunches that I could prepare in advance and freeze? I don’t really have any food dislikes apart from not having a sweet tooth (so no berries...).
It’s going to be crazy busy, starting earlier to supervise students in the morning, no classroom of my own and our staff room has moved to a different building. I’ve also volunteered for lunch duty in the canteen, which comes with a free lunch which I doubt I’ll eat as the options are high carb low fat! So quick to reheat/eat is essential. Happy with hot or cold food.

Thank you! Lots of favourites there - I seem to have forgotten how to meal prep in lockdown! I used to make keto pizza and I’ll also give the burritos mentioned in the thread a go. Just need to see if they freeze ok.
The simplest thing is make double for dinner, and take the leftovers in the next day. Either microwave them at work, or heat them up and bring them in a wide mouth thermos flask.
Overnight oats - I know it sounds ridiculous for lunch but I am a teacher too and take those in. Easy, filling and prepared the night before - they keep me going despite my colleagues finding it all quite funny 😂
