Ask what is in them, then make a choice.
Lots of premium supermarket brands are low in carbs (check the total against your daily allowance), and there are some carb free brands, like Black Farmers.
Also, anyone who makes sausages on site might be persuaded to make carb free. There is no technical reason for sausages to have wheat or potato added. You probably won't be the only customer who would like carb free sausages, but you maybe the one who finally convinces them it's worth making.
Two things:
Black farmer aren't carb free, but 1g/100g so pretty close. Heck and supermarket premium brands have a little more than this.
I had assumed black farmer was just a random name, but it's actually made in Devon by a farmer born in Jamaica. 🇯🇲 😎
Before you said that I was presuming (wrongly) from a farm in the "Black Country" part of West Midlands so called because of the coal seam and ironworks.
I thought the same (or Black Hills, but that turns out to be in America), but I heard a fragment of an interview with him a few days ago.

Very interesting question Magienoire, that led me to quantify as the quality of sausages is so incredibly variable. The ingredent list of sausages changes significantly between brand and type. The only supermarket brand we buy are Tesco Finest Cumberland as they have a highest meat content and I always felt that was a guide to limit the other stuff they put in.
I do buy our local free range farm sausages and also their sausage meat. That is wonderful because you can put your own seasoning, herbs and spices. The charge currently is £4.99 per 500grams for the meat. I also make meat balls and burgers with this meat. It is really versatile.
Below I have copy/pasted two Cumberland sausages sold at Tesco. Note the huge difference in the ingredients.
