only started to count carbs yesterday, so had 120g carbs, is that about right?

I foolishly weighed myself again today, am doing alternate day fasting, so not eaten for 36hrs, and weighed 4lbns heavier, obviously this isn't fat. Any idea where the extra weight came from?
Whilst fasting has its merits, it's not the answer to all ills. Fasting can stress your body and increase cortisol levels and raised cortisol levels can increase your weight.
I think you need to concentrate on your eating first and maybe add some IF at a later stage. If you do low carb properly, you won't feel as hungry and missing meals becomes a normal occurrence.
I have no idea what you're eating on a daily basis, so an example meal plan would help.

I pretty much eat the same thing most days, when not fasting. Break fast with full fact Greek yogurt, approx, 225mls, I add seeds, tsp of Cacoa, handful of frozen blueberries. an 1hr later I have melon, usually 380mg. Later I have raw mushroom and red cabbage, approx. 150mg. One yellow bell pepper, whole avocado, sun dries tomato's and mozzarella, in olive oil, piece of salmon approx., 120gms. Two black coffees in the morning, water with apple cider vinegar and salt added throughout the day.
I'm not sure how you make that 120g carbs? I would choose strawberries/raspberries/backberries over blueberries as they are the highest carb berries and wonder why you have melon 1 hour after breakfast? If you increased your breakfast, could you eliminate that snack?
There's nothing there that I wouldn't eat and I'd probably eat much more! I do aim for more variety, as I think that's the best way to keep your interest and get the maximum range of micronutrients.
Do you dislike cooking? Everything seems to be raw, bar the salmon

Yes , I do dislike cooking, and am vegetarian. I usually start eating around 1500hrs, that's why I said I break fast. Typically finishing eating 1900hrs. My typical pattern is to not eat breakfast and to go long periods without eating, so calling this IF, was a natural progression, just extended it a little. I only weighed the food yesterday to try to calculate how much carb I was eating. I can easily do alternate day fasting. My main problem was binge eating, I havn't binged for 26 days now, no cravings for sweet things.
You must be pescatarian to be eating salmon. Do you eat eggs?
I questioned the melon, as that has you eating three times in a day and it could be reduced to twice a day by adding more to your first meal of the day. As a proponent of fasting, you would know that the fewer times we eat, the less we induce an insulin response which puts us into fat storage mode, rather than fat burning mode, especially when that meal is a sugary one.
I'm not saying that you find fasting difficult, you questioned a 4lb gain after a 36hr fast and I was trying to give you a reason for that.
From your meal plan, your carb count is lower than 120g, more like 80g, with the highest being the sundried tomatoes and the melon. If you swapped those for extra berries and fresh tomatoes, you'd come in well under 50g carbs.

Thank you, I really appreciate your advice, I will definitely cut the melon out, I love cottage cheese and feta cheese, so may substitute either of these for the sundried toms and mozzarella, may just drizzle olive oil instead. Thanks again for your advice very mu8ch appreciated.

also I havn't been eating eggs, not that keen on boiled , may try scrambled or omelette.
Omelettes are a big favourite of mine and you can add all sorts of veg and cheese to them
As you don't like cooking much, I make egg muffins that can be frozen. It would mean you could cook once, but eat for a week
I aim for 20g of carbs or less. But im full keto.
