Good evening everyone, hope you've all kept safe in the horrible weather we've had. We have a lot of flooding here but a minor inconvenience compared to other parts of the country. I had a real urge for something sweet today so opted to finally make those coconut flour pancakes. In the absence of berries, I had then with cream and sugar free syrup. Amazingly tasty and I thought I'd save the rest for tomorrow. Yeah right! π

Can you share the recipe please... Can you substitute almond flour for coconut as I have plenty of that. Cheers

This one is for coconut flour which I think reacts differently to almond flour in a recipe so not sure you can swap, but get googling, there are lots of recipes out there using almond flour. Did find I could taste the egg a bit in these so let me know if you come up with a better one! π
