I think I started out right today. For my breakfast I had a sausage patty and hard boiled egg. For lunch I plan to have a salad with turkey and blue cheese dressing. Not sure what supper will be yet. Gonna figure it out soon.

I did check out the diet doctor. I found some inspiration there. I also looked up low carb diets online. I’m using the Atkins App currently to track my carbs. For my third meal of the day I decided on chicken drumsticks and some tomato slices. Very satisfying. It was nice allowing myself to eat the skin for a change. Lol. I will look through diet doctor recipes too and continue learning. Thank you for your reply. It was encouraging and helpful. Nice to know I’m not alone in this journey.

I made a lovely dinner the other night - I used to make it all the time when I ate dairy, but was a bit harder as I had to make it dairy-free.
Sautee chicken breast seasoned with herb salt with mushrooms and garlic in lots of butter(I do the chicken first then rest it while I sautee the mushrooms and garlic), then add cream (I used coconut cream), Dijon and salt and pepper to taste. Let the chicken cook in the sauce. Make lots of sauce, as it is delicious drizzled over broccoli or green beans. As a side dish, I cut courgettes into thin slices, laid them out in a pyrex dish, dotted them with butter after seasoning with salt and pepper, and then baked them until fairly crispy.
This is a rich meal you could serve to non-keto guests, and easily adapts to those who don't eat dairy. It is delish.
