Though quinoa isn't wheat - it is still a carb..not sure if it would affect INR to be honest. Does carb affect INR?
No, carbs of and by themselves does not effect INR. Vitamin K lowers INR; some foods and herbs can either directly raise .INR or can increase " thinness" via other dynamics on the blood.
As far as I know it doesn't, its actually a seed as you likely already know and it seems to not affect my husband's INR at all, whereas bread and pasta does a little. Whenever I make it, it works out fine with his meds and does not affect them at all.

Are you selftesting? Then you can try a small amount and see if anything happens. (Make notes of course).
I would not make my bread with it if I am not sure how it will affect my INR. I ate a small amount of it yesterday as my yougest daughter like things like that.

Hi tassie. As far as I am aware, quinoa contains no or very little vitamin K (there are a number of online sites which list vitamin K levels of common foods). So it should have no effect on your INR.

I eat Quinoa as it is high in protein and I need protein being a vegetarian. I haven't noticed it affecting my INR but I nave chronically unstable INR anyway. My GP has said she believes foods high in protein "could" affect the INR via a route other than that of vitamin K.
The full effects of different substances on the INR has not yet been fully documented.
