Grits and Glycemic Index – Diabetics, Be Aware!

Hi everyone!

I recently learned that instant grits have a high glycemic index (above 80), which can spike blood sugar levels. However, stone-ground grits are a better option (GI around 65) due to more fiber.

If you're managing diabetes or watching your blood sugar, choose less processed grits and pair them with protein.

I love shrimp and grits. I broil the shrimp in olive oil, seasoned heavily with fresh garlic, cumin, and paprika. Yum.
