I get a veg box each week, and we're currently going through a bit if an aubergine phase (eggplant for the American's among us). Does anyone have any nice recipes I could use them in?
I always tend to go for something tomato based, today I tried to shake it up with an aubergine and chickpea curry with peppers, spring onions, tomatoes and chard.

Babaganoush 😋 That's similar to hummus. Roast the 🍆 in the oven until the skin is a little charred, peel (or not) and blend with olive oil, garlic, tahini, lemon juice and salt pepper.
I make a curry too which we have with rice. Aubergine potatoes and tomatoes. Cut the aubergine in cubes add a bit of oil in a pot, chopped tomatoes and any spices you like, I use red chilli powder turmeric salt and cumin and coriander powder and garlic and ginger paste. Add some water and let the aubergine softened but not completely mash and let tomatoes melt into a puree. Add potatoes and some more water and cook till potatoes soften and leave enough water so its soupy. You could have with naan bread or normal bread if you don't want it with rice. You can add some fresh coriander at the end if you want.
Hi - check out Pasta Grammar on YouTube, they did a whole Aubergine show- lots of delicious looking recipes! I've been following them for a while - for all things Italian food, and finding it very useful.
