These are my recipes for Tagines.

Moroccan spiced stew casserole.

Like Curries but milder and have added dried fruit.

Apricots or Prunes.

Use Chickpeas and Couscous or Bulghar wheat.

Simple easy great to use Slow Cooker use whole joints Chicken and cover in spices slow cook melting.

Blends in the shops can be expensive.

Ras Han out a spice blend can be different types.

Means head of the shop in Arabic.

Those small bottle tubs have a variety of spices.

Why nor look at making your own these recipes not a lot of spices needed.

As every North African country has its own recipes mixes blends.

This one I have used before.

Fennel Seeds, Cumin, Ground Coriander, Turmeric, Cinnamon, Mustard Seeds. Cloves or Fenegreek.

Use fry pan dry fry teaspoon of each.

Add to blender or spice mill .

This works well Sunday Roasted Joints Chicken, Lamb, Beef cheap cuts.

Recommend Lamb Shoulder, Beef Shin the best to use long slow cover with spices as blended, oil any.

Olive be fine and Lemon Juice buy a bottle. Use spread over.

Cover foil and roast 150 degrees for a hour plus check adjust timings.

Couscous as Packet instructions add Mint Lemon to water and use a kettle .

Shredded when cooked add to saucepan add Spices as before same mix.

Chickpeas and make up Couscous as packet instructions.

Use Passata stock cube or juice roasting meat.

Understand you could just make the whole thing a one pot.

Trying to give you other ideas have tried.

Add Chicken Legs Thighs to a saute pan seal.

Make up a spice blend a different one.

Ginger ground, Turmeric, Cumin, Paprika, Cinnamon half teaspoon each , use as before dry fry then blender or spice mill.

Coat Chicken add Passata roots go well here any, your choice.

Used Butternut squash and Sweet Potato, Carrots, Potatoes, Swede.

Dice roughly add stock dried fruit Onions, Garlic and Chickpeas. Dried fruit Prunes or Apricots.

Just as they are rehydrate in sauce, use Coriander herb or Parsley end.

Or use dried Thyme start .

Oven 150 degrees slow hour plus or use Slow cooker four hours plus.

Replace roots with Courgettes Potatoes and Carrots or Peppers and Aubergines.

Just some ideas.

Some thing to look at the African spice dishes recipes.

West Africa Jollof a spiced dish using Chillies and Ginger as a base.

I had this very good .

Made with Rice used with Peppers and Lamb Fish any meat Chicken thighs great.

Also the Egyptian and the sorrounding areas of the Med of North Africa Tunisia so on.

Use different spices as in any of the countries that was were colonised by other powers.

So in Egypt get there version of Paella uses Turmeric and Coriander has Mango in it.

Rice and usually Chicken what is available.

All over the Med series of similar recipes using Peppers Onions and Tomatoes.

Lots of different spices mixes not all about hot spicy .

Although some regions local laws if the food is not laden with chillies wives do not love their husbands.

Chillies being the marital aid in any relationship if you get my drift.

As my friend found out put too much chilli in got shall we say a bit fresh with his wife of mature years.

Ended up being thrown out his home stayed with his brothers.

Mentioned to me stopped doing all that well she did. Single beds after our last child was born and that was mid 60's.

I did explain to him always measure out never just chuck it in, has that effect most spices do.

Chillies and Ginger Garlic some castes the Brahma do forbid because it arouses the senses.

So there you go another reason to spice up your life if you so wish, although be warned lol...
