This is excellent for lunch and breakfast. Two eggs, two medallions of good for you bacon. Spinach and plum tomatoes. A bit of butter to line two muffin bowls, put the bacon in the bottom, crack an egg into it and put in the oven, 180 for 10-15 minutes or until cooked. Then place it on a bed of spinach and cucumber with plum tomatoes around the outside. Filling, delicious and only 275 calories.
