Hiya.. ππ».. I'm usually over on the weight-loss community but thought I'd share a couple of recipes here too for anyone that would make use of them
Squash, Tomato and Chickpea Curry.
This is not the easiest meal to make as it requires a bit of effort grinding the seeds, chopping the squash and the recipe isn't spot on (you have to add ingredients to taste). But nonetheless it's super healthy and very tasty if you like this sort of thing! Enjoy

Thanks, looks really tasty. I love butternut squash but am put off cooking with it too much as it's such a struggle to peel. A friend of mine suggested pricking it or stabbing it with a knife and putting it in the microwave for a few minutes to soften it up. I've not tried it yet so no guarantees but might be worth a try.
You're welcome. A couple of people have said that about peeling it. Thanks for the suggestion.. With this type of peeler, ikea.com/gb/en/p/ikea-365-v... the right angle and the right pressure I don't find it to be an issue.. it's the dicing that puts me off, I find it really time consuming.
