Yes I was thinking of making a Vegan stuffing and have printed off a couple of recipes, I will post on here as to which one I decide to make. Surely it's the best part of the meal.

I've been making the same recipe for lemon, thyme and parsley stuffing for 40 plus years, and the family always request it, even when we don't have turkey! Very easy, either make it to stuff a bird, or roll up balls and bake in the oven.
Sorry the recipe is in ounces, but as I got it from ma-in-law a long time ago, it was before metric came in.
So 4oz fresh breadcrumbs, 2oz suet (use veg suet for your veggie guests), juice and rind of a lemon, fresh thyme (or good pinch of dry) and fresh chopped parsley. Blend everything together, binding with lemon juice and season well. Crumbly texture but ok to stuff bird.
To make individual balls, I bind the mixture with a whisked egg, then roll the balls in toasted breadcrumbs, and put in a hot oven with the roasties for about 10-15 minutes.
Delicious fresh zesty flavour, and lighter and fresher than many stuffings.
