For dinner tonight we cooked a Thai Chicken and Basil stir fry which was packed full of veggies - onions, carrots, beans, capsicum, cauliflower and broccoli. This was followed by some Greek yogurt with fresh cherries and nuts. 😋 Delicious.

We cut everything up earlier which probably took 20-30 minutes. We then went out to the movies (we saw “Yesterday” which was great). We cooked it when we came home which again probably took 20-30 minutes. I was teaching my husband what order the veggies needed to go in so that it was all cooked properly at the end.

We’re in Australia so it doesn’t have the same meaning for us. We’re heading out Thursday night with friends to dinner and a Beatles tribute band. Enjoy your Independence Day celebrations 🎉
Thank you! In my City, they did an early fireworks display. Not sure if they will do anything on the actual day, but will see. Some people who were driving on the street stopped and watched the show! Never seen that type of thing happen in driving traffic before. But, I guess, there's a first for everything. If there aren't any fireworks on Thursday, we can always watch them on TV when it's also a 4th Concert.
We might have hotdogs and a few things on the side for dinner, but I need to see what is planned.
