My Mother has SEVERE Gluten, and Lactose, allergies and I need some, fairly simple but 'tasty', recipes for her to make. (Perhaps even for Me, to make, for her) She Can eat all meat, fish, eggs, rice and non gluten containing grains- Spelt? (I don't know what this is)
We both have, very small, Kitchen areas so no 'Needs Six Rings, Four Thousand Surfaces and every ingredient on this Earth'....recipes please. I already make Chilli Con Carne, Bolognaise and the like, along with soups and, although it was only the once, Meatballs- easier, by far, to buy! (if anyone DOES, want to make these, I can give you a recipe, in fact two.)
So come on 'Peeps' put your Thinking Caps on, for MY Mother's sake, PLEASE? I know, that she, will appreciate, any assistance that you can give her.

Hi Andrew pancakes are great for gluten free and you can make really easy ones with nutritious flour like buckwheat gram flour and add ground almonds. And they are very easy to make.
Another really good main meal is a cottage pie and use sweet potato with the crust, theres soups casseroles that are so easy to keep gluten free.
Really your mother needs to look at what she can eat and just be aware of what has to be avoided and when the gluten free diet works its magic your mum will feel so much better.
As Leah says we have many gf recipes under the GF topic so good luck to you and your mum and any questions/queries then you just ask.
I shall think about it - and add anything if something comes to mind. But in the meantime, you have some great suggestions and I hope that you and your Mum enjoy some nice meals.
Please avoid spelt! It's not gluten free, it's an ancient wheat-like grain, that unfortunately has a lot of misinformation around it.
I'm a big fan of Pinterest for looking up and collating recipes. Some simple terms like "dairy free, gluten free recipes" or even "paleo/whole 30 recipes" will bring up quite a lot of ideas for you. paleo and whole 30 are dairy and gluten free (free from a lot of other things too), but those search terms will bring up an abundance of recipes for you.
Gluten and dairy often go hand-in-hand, so it's surprising how hard it can be to find meals free of both.
