Here's some cookies I made earlier this afternoon, to make them more nutritional I used ground linseeds ground almonds and plain gf flour and some currants as cookies with currants are really good and the photo shows the texture.
I made some gf bread at the same time and ground some pumpkin seeds with the linseeds and thats given it a smashing colour.
Those cookies look really scrumptious! I agree that Cookies with Currants are a great idea! Lovely texture too - they look like they would melt in the mouth.
I have a friend who would appreciate some of those Gluten-free cookies, so I was wondering if you could share the exact recipe for them, so I can try to do them - and surprise her with a gift. As well as an opportunity to sample one or two myself - I feel sure my hubby would also like to sample one!
Whiz it into a dough and spread it a baking tray and bake 160C for about 30 mins until golden sometimes I cooked them in a muffin tray and they bake quicker but I like slices the best.
I find goats butter is easier to digest and it has a lower melting pot so makes biscuits shorter so is worth trying.
I think thats a really nice thing to do make some biscuits for a friend so good for you and thanks for asking me. ๐
