With the sun shining I decided to get my 3 mile walk in early today. (Actually 5.4km) Birds were singing, daffodils swaying in the wind and people I passed were friendly. Altogether a lovely morning.

I have served up my first Tuna recipe attempt. Looks a little overcooked but it tasted lovely. Served with baby plum tomatoes and 40g of sweetcorn. About 160 calories. The Tuna patty was made from

1tin Tuna in spring water added to 1 tsp.coarse grain mustard, half sliced up or torn bread (I used wholemeal), 1tbsp chopped parsley, 1 clove of garlic, 1/2 a white onion. Stir together.

Add one small egg, salt and pepper.

Form into 2 patties. I used a metal cooking ring to get the shape.

Fry light a frying pan and cook them gently for 2-3 minutes on each side. Serve.

I think for an evening meal I would add a baked sweet potato about 110 calories.

I was just getting read to head out the door for an afternoon walk, and I've spotted your lovely Challenge post, and I think it's really great! :-) I love the Tuna recipe you've shared, it looks really tasty - I will be putting that on my list to try - and your suggestion to have it as an evening meal with a baked sweet potato sounds great too.
