A natural source of iron from food is the easiest for us to absorb so as well as being really nice with salad beets pack a nutritional punch.

I have always just loved beet greens. We gardened for many years and the thinking of the beets was my absolute favorite time of harvesting.

That's interesting information - I didn't know that. I've never eaten beetroot leaves before, and I'm wondering how they taste. I love beetroot itself - I had some today.

The leaves taste very mildly of beetroot. I add mine to salad. 🙂

I was told that beets were originally grown for their leave. Then people started to eat the root veg too.

This is only what I was told as a child by the farming community that I grew up around. No idea how much truth there is to it. But it's good to be able to grow something that you can eat both leave and the root veg.

Oddbox had a lovely recipe of beetroot leaves in Yoghurt kind of like a baba ganoush. Was very tasty.

Remember that plants contain only non-haem iron, so increase absorption by having vitamin C and some haem iron (if you aren't vegan) at the same meal. Dress it with a lemon juice vinaigrette, and add a couple of sardines.

Edit: Oh! Beetroot leaves contain plenty of vitamin C, so you can skip the lemon juice! Just make sure you eat them raw, because cooking destroys vitamin C.
