I cook from scratch. It’s just chop veg and grill. Paleo diet. I don’t mess about, it’s bish bash bosh.

Yes I have found best scratch cooking. A pain sometimes. do it in batch and freeze some.

I also agree about cooking from scratch… you will likely need to stick with “whole” foods… meats, veg, rice, potatoes. Avoid anything processed as even GF things likely have sugar added.

Unfortunately nearly everything is stuffed with sugar I’ve been moaning about that for a decade they need to make more savoury gluten free products everything gluten free that is stuffed with sugar is basically making everyone gluten free die quicker as sugar is the cause of heart disease and most cancer as cancer feeds on sugar.

Yes, I am also Celiac and Glucose intolerant. It takes awhile to get over sugar cravings, but can be done. Just stick to meat and veges.
