Need Help With Foods

I am still trying to get this diet nailed down. Recently went to the doctor. Celiac markers are still elevated on blood work. I still have not had the biopsy and trying to avoid Having it bc I can’t go back to eating gluten everyday. I feel so incredibly terrible right now - so exhausted and worn down. I don’t know for sure but suspect it’s a gluten reaction. This diet is so confusing… I have seen a dietitian, it wasn’t much help.

We don’t have to eat only things that are certified gluten free, correct? Jarred spaghetti and Alfredo sauces are some things I am struggling to understand. I usually eat Ragu (Alfredo and spaghetti) Bertolli (Alfredo sauce) or Classico (spaghetti sauce). Does anyone know if these are safe?

Sorry to hear. It’s a shame the dietitian wasn’t much help.

It’s hard to know re the jarred sauces. I’m in the UK and labelling may be different. Here we have “May contain…” labels in addition to the Allergen label “contains”. It might not have gluten in the ingredients list but if it says May contain gluten (wheat) it means there’s a cross contamination risk at the manufacturer site. If there’s no labels like this and there’s no gluten containing ingredients on the jar, you can’t assume there’s no cross contamination. Either contact the company that makes the product and ask if it’s safe for coeliacs, whether they manufacture foods with wheat barley or rye at the same factory? or stick to products labelled gluten free.

Having said that it sounds like you’re suffering and if your markers are up can you not just get the biopsy asap? Chances are it would be positive.

When the gut is damaged it can take upto two years to heal. The markers suggest active ongoing damage. It’s best to stick to a basic diet of real whole foods, naturally gluten free fruits, veg and fish/meat etc as best you can. Natural fats with the food help heal the gut, like butter, coconut avocado, oily fish like wild salmon or canned sardines. Make sure you’re getting good nutrition. Have you had vitamin D, B 12, Folate and Iron checked?

Unfortunately there’s huge risk of gluten from cross contamination unless certified gf.

Once you’re healed it will be easier and as long as no gluten containing ingredients may be better tolerated.
