She has recently been told she has a dairy intolerance, and has switched to using soya milk in her cereal and tea etc, she has also drastically reduced how much dairy she consumes.
She has become terribly constipated.
Can anyone provide any insight or advice please?

Soy is one of the common allergens, so I wonder if it just doesn’t agree with your wife? Perhaps try a different plant based milk and see if there’s any improvement?
If the problem persists do make sure to contact your doctor.
This might not be the advice you expect, but I suggest asking for your doctor for a Coeliac blood test.
I became dairy intolerant in my mid-twenties. I didn’t think too much about it and lived with it for over a decade without seeking any support. A work colleague even suggested to me that she thought I was a coeliac - and I dismissed it.
She was right - I was, and I was diagnosed about a year after that conversation took place. It turns out that the dairy intolerance had been caused by the damage the Coeliac Disease had done to my guts.
I mention it because another symptom of Coeliac Disease in some people is constipation. Also if you have one autoimmune condition (i.e. Type 1 Diabetes), you are at much higher risk of being diagnosed with other autoimmune issues such as Coeliac Disease.
Hopefully I’m wrong, but I think it would be a good idea to rule it out.
