I think the difference is that you can be gluten intolerant without it being coeliac disease.in both cases you would follow a gluten free diet but coeliac has a more severe reaction to it.

Coeliac disease is caused by a reaction of the immune system to gluten – a protein found in wheat, barley and rye. When someone with coeliac disease eats gluten, their immune system reacts by damaging the lining of the small intestine.

In a healthy small intestine, there are small, finger like projections (villi) that allow the body to absorb nutrients from food into the blood. If you have coeliac disease, these villi become flat and you have difficulty absorbing nutrients. Subsequently other health issues will occur.

Gluten intolerance can be extremely debilitating but possibly not so detrimental to your health, but IMO this is questionable and should be taken very seriously by sufferers.
