problems with polenta?

Does anybody have problems with polenta? I thought I had discovered something wonderful but after eating this I became really bloated and had some other dodgy symptoms.

Bad luck, Urbangirl. I've had polenta a few times and was ok, but corn can be a problem for some coeliacs I believe.

Thanks Penel. I didn't think corn was a problem for me but clearly it is. The first time I had polenta I read the labelling after eating and saw the advice that the product contained gluten. So I made attempts to find GF polenta. Do you know why corn is a problem?

So, perhaps it was cross contamination?

After a trawl around PubMed I found some articles saying that some coeliacs can have a gluten like response to maize, unfortunately.

The more I find out, the closer I get to embracing the low carb diet.

Grim news for me! I got the polenta from a reputable health food shop. I don't think it was contaminated but you never know. But I agree with you about the low carb diet. I eat v few carbs and feel better in as much as I eat food that is fresh eg vegetables, fruit, meat, fish etc. I am curious as to why I have developed so many intolerances as I have not been diagnosed coeliac yet the list of forbidden foods continues to expand. Wonder why?
