I'm trying to understand the 2WW. I am currently 10dp5dt and my OTD is day 14 post transfer. My clinic will only do a blood test if I get a positive pregnancy test day after a full 2 weeks have elapsed. I'm debating whether to test from day 11 as i have been looking through the forum and many people appear to have an OTD at 11 days post transfer. How is that a 2WW or is my clinic just being overly strict?

2ww is 14 days post ovulation - it is "intended" for those TTC naturally who are tracking ovulation. If you do a 5 day transfer your 2ww completes (day 14) on 9dp5dt. If you use an early response test you can get a positive as early as 5dp5dt or 6dp5dt. For me I see positive by 7dp5dt. Vast majority will see a positive on HPT by 9dp5dt. My clinic does first bloods between day 9 and 11 post day 5 transfer (they just ask you to come in at your leisure).
Your clinic may want to "wait" as to "miss" chemicals. Other clinics want to know if you have a chemical.

That’s so interesting, my clinic said they always count 18 days from fertilisation, so OTD is day 13 after a 5dt wonder why they’re all different!
