fatty liver is from excessive dietary fat plus insult to liver function by alcohol,drugs,chemicals,as simple as that. nothing to do with insulin .

fasting is not the solution but reducing your fat in diet and support healthy liver function by avoiding harmful agents and include multivitamin mineral supplement. Get away from LCHF diet if you are in it.
