Just saw this article that suggests you can use cauliflower rice instead of rice, and this pasta alternative made from shredded zucchini. And sorry if this makes you hungry.

Has anyone tried these kind of alternatives to carbs? Are they available in most supermarkets?
I have, both of those are great substitutes for carbs. We got a cheap spiralizer and make our own zucchini noodles for spaghetti. Not a perfect substitute but works well. We saute them with some olive oil before plating them. Easy to add spices then also.
Have tried the cauliflower rice product. Was not impressed. But that's me. I do not care for cooked cauliflower, anyway. Raw cauliflower in my salad or pickled. As for the zucchini - hum, not sure about that. I do have a recipe with zucchini and eggplant used in place of lasagna noodles. Very good. My husband even likes it.
That sounds like a very virtuous lasagna. pasta and french fries are definitely part of the high carb diet that is causing some liver issues so a great substitute. I have now substituted filtered water and sometimes Kombucha for all soda which is an easy fix.
Resistant starch is something people should learn about because it affects the insulin blood sugar process as well as providing food for important colon bacteria.
The veggie "pasta" is good, but it makes me gassy. Any suggestions?
My granddaughter shared some of her mashed cauliflower made by her Mom with me & I was impressed. I've been having fun with new ideas for veggies & having an 18 month old as a taste tester.
I've added shredded cabbage to my salad for more crunch. yum.
Wayne, could you clarify resistant starch for me? I was confused after reading. Is pasta better for you cooked and then cooled before eating it?
