Ideally the test provider should advise but generally it is advisable to be hydrated and, at least, avoid meat and fish if not fully fasted. See 2 links below - I also have a paper from a medic entitled "Effect of dehydration on blood tests" who states:
"Before routine blood tests, patients should avoid unnecessary physical activity, avoid hot dry environments, ensure adequate intake of water, and avoid diuretic substances such as caffein".
Before labs, you should be drinking water and some say between 64-72 ounces a day, especially the week of the lab. The day of the lab, a little water but not too much, and no food for 8 hours before. Better to fast overnight. But have some water, no coffee or tea, 8 to12 ounces before the lab.
