Plant lectins cause restless leg syndrome?

A lot of nonsense in this area. Writing at the link cites Plant Paradox author Gundry whose writing has been thoroughly debunked. The writer also seems to be confused about the difference between toxic seeds and edible fruits:

"Dr. Gibbons .. was certainly right about the fruit. Some plants propagate by growing hard shelled seeds that resist digestion. ..Other plants produce ‘naked’ seeds intended to be deposited near the mother plant. These plants do not want their seeds to be eaten or carried away by plants or humans. To dissuade predators from eating these fruits[??] such plants produce protective chemicals. If a bunny eats such an apparently succulent plant, it quickly learns that these toxins make it unwell. "

I think you have a lot of diversity to lose if you cut out everything with lectins. And an important source of plant proteins which seem to be healthier than meat. I think if you soak your beans for a day or 36 hours then slow cook them before using in a recipe they will be fine. Lentils need less, maybe 6 hours soaking until they are about to start sprouting. Do big batches and freeze in meal sized lots then use instead of canned ones to save eating plastic can linings.
