That is a very good question, several reasons why you will have good and bad days.
1-If you are taking Parkinson's medication, it is absorbed in the upper bowls not the stomach, not regular? neither will the medication be and constipation is a symptom of PD.
2- The meds need to get through the blood brain barrier to work and that is more difficult if a lot of protein gets in the way as would happen if you eat a lot of protein before you take the meds.
3- Stress increases the PD and PD increases the stress, try to get rid or stay away from stress-full things, situations and people.
4-Sleep is very important, a nap may be a must. Tired , lack of rest brings on the PD and of course PD causes sleeplessness.
5- Exercise is very very important in reducing PD, exercise today and you will feel better tomorrow.
6- Sometimes you just have a really crappy day for no apparent reason. It will be better tomorrow.
