I have my Week 5 Run 1 tomorrow evening, and then on Saturday go on holiday for a week. While I’d love to take my trainers and carry on in sunny Greece, I’m diabetic and the heat makes my blood sugars tricky to control, just as vigorous exercise does. I’d really rather not mix the two!
My thoughts are to go back to Week 4 Run 3 on the Monday I get back, and then start week 5 again. Does this seem like a good idea? I seem to have picked the moment everything starts to kick up a gear to have a week off.

By the sound of it you running on holiday would not be a great idea for your health, so repeating w4 r3 when you get back would be a good way to see how much much of an effect the week off had.
Nah, just carry on where you left off (would be different if you were facing W5R3 run as your first run back... perhaps)
Think about it... any of us can have a bit of a rubbish run at any point. Doing W4R3 again won't give you any more reliable information than W5R1 will.
