Do you like Samosas?

We love Indian food and very much like Samosas. I have put my Samosa recipe below, it's really traditional and not greasy.

My Samosa

I was given this recipe by an Asian friend I worked with nearly 40 years ago.  It is traditional but healthier than deep frying.

Serves 4 and makes 16, each samosa is 55 calories.

I always liked samosas but was never very keen on the greasy pastry. The logical way seemed to make them with puff pastry. The difficulty is restricting yourself to only two or three.

1 tablespoon of oil

1 or 2 sheets of puff pastry defrosted

8oz potato

6oz frozen peas

1 onion

Half an inch root ginger

Quarter teaspoon chilli powder

Salt and pepper

3 tablespoons fresh coriander

1 teaspoon ground coriander

1 teaspoon garam masala

1 teaspoon ground cumin

2 tablespoons lemon juice

Pre heat the oven to 180° or gas 5

Peel and dice the potatoes

Cook the potatoes until soft and add peas for last couple of minutes

Peel and chop the onion

Heat the oil and gently fry the onion and ginger until transparent

Add the ground coriander, ground cumin,  garam masala and stir together for 1-2 minutes

Add potatoes and peas

Stir in the lemon juice and fresh coriander,  season with salt and pepper and allow to cool.

Roll the pastry out to a 8 x 16 inch rectangle (this is why you might need two pre rolled sheets).

At regular intervals dot 16 teaspoonfuls of filling over half the pastry.

Brush with water around each portion of filling.  Fold over or use 2nd sheet of pastry and press down around each portion of filling to ensure that it sticks together. 

Place on the greased baking sheet ( I spray with a light oil spray.

Place in the oven and bake for 15/20 minutes until golden.

Enjoy with whatever you normally have with samosas.  I make my own Mango chutney.

It is really delicious, no reason why you can’t make the traditional triangle shape if you wish but it is nice whatever shape.
