A Plant-Based Diet Can Taste Good - Recipes

I have written several posts on my dietary and lifestyle changes in this forum. The response by some members of the forum have been the equivalent of 'Yuck! I would rather die than eat like that!'

This of course, is an ignorant response.

The reason most people respond like that is because they don't know how to properly prepare foods to be tasty.

Remember, its not what you eat once in a while (once every couple of months) that will hurt you, it is what you eat habitually every day that has the greatest impact on your health.

Preaching to the converted I'm sure but if anyone is going to make healthy changes to their diet remember those of us on warfarin may find INR fluctuates, lots of legumes in particular chick peas, have moderate amounts of Vit K and so do my much loved nuts and seeds

Thanks for that info. I did not know of Ricardo and Roda so will look them up. McDougall has many recipes also Esselstyn. I must admit the first week of WFPB way of eating I thought what on earth am I going to eat but now after 18 months I would not go any other way. Sometimes when I see really obese people I wish I could take them in hand. Not sure that I have seen your recipes. A favourite of mine is fuisily pasta, silken tofu, pesto and spinach.

Tell me if i am wrong. you hav been eating only vegetables or vegetable based and what is the reflection on your weight overall life and cholesterol levels

Vegetable-based diet. Out of 21 meals per week, 3 are fish, 1 or 2 are lean chicken breast. The remainder, from a protein perspective, are usually legumes (beans, chick peas, lentils - based on the recipes I noted in my post), egg-whites, and nuts.

I have vegetables with all meals except breakfast. For breakfast I have organic, unsweetened, unsalted, almond butter on a toasted slice of German multi-grain bread. I very lightly drizzle with Greek honey, and add a half teaspoon of True Cinnamon (a.k.a. Ceylon cinnamon).

With lunches and dinners I will have salads - usually arugula, spinach or Greek, along with side dishes of grilled vegetables, drizzled with extra virgin olive oil and lightly salted, or sauteed spinach, or rapini, or dandelions, each with olive oil and lightly salted.

My pre-surgery (triple bypass - March 2015) weight was 195 lbs. or 88.45 kg. Today I weigh 155 lbs. or 70.31 kg. One year ago I weighed 159.6 lbs. I just returned this morning from getting my body fat measured using a device called Bod Pod, that utilizes air displacement technology to determine body composition.

Since my last measure exactly one year ago, I have lost 5.1 lbs of body fat, and have gained 0.5 lbs. of muscle. My body fat measure went from 19.9% one year ago, to 17.2% today.

I am a 55 year old male, 5'10" or 178 cm in height.

My standard and advanced blood test metrics are all, either in the optimal or normal range. I have a great deal of energy.

I exercise daily by taking a 30-60 minute brisk walk, this is in addition to alternating days between High Intensity Interval Training cardio workouts, with resistance training (push-ups, and various isotonic exercises like bicep curls with moderate weight). I also play ice hockey once per week (year-round), and walk the golf course as I play 2-3 rounds per week (summer only).

I do not take any medications (my cardiologist is not happy about me not taking a statin). I take an 81 mg tablet of aspirin (non-prescription).

I take lots of vitamins: B3 (niancin), B6, B12, Folate, C, D, E, Fish oil, Turmeric, CoQ10, and have recently started on L-Lysine.

You are wrong, please read my reply again, I talk about lots of other foods also Esselstyn and McDougall who both have very varied diets/recipes but all under the WFPB heading

sorry, just picked up your reply. Do seem to be under two names, i.e. Anne76. There are so many sites. As I said before Dr Esselsytn and McDougall have many recipes. I have got used to this way of eating. Please keep in touch if I can help further, the main thing is not to have the oil and stick to a vegan diet.
