Too high LDL and too low HDL usually comes when we have excessively high cholesterol count. Personally I would be trying to avoid too much animal (saturated) fats - concentrating more on say Olive Oil for cooking. However I guess it also depends on what quantities of these fats we are talking about? As a westerner who does quite a lot of Indian style cooking, I always have used Olive Oil. :)
