this affordable uplifting and super Delicioso carb load of familiar wonderful Mexican food can be enjoyed at home or away , in resorts or the coast… even a great uplifting picnic in your local park. This is good ole earthy Mexican fare that stimulates the “ buds “ of any aficionado brother looking for something to stuff your ribs and make you smile.
The foundation food is freshly prepared pork carnitas , fresh hot tortillas, beans and rice.
Then three kinds of ceviche:
Tapia fish ceviche
Smok’in hot green pepper cured shrimp ceviche ( Fuego )
And jumbo shrimp , crab meat and octopus ceviche
With lime wedges and fresh cilantro garnish
3 kinds of mild to medium salsas :
Standard Red pepper restaurant salsa - medium hot
Salsa de ajonjoli … the Uber wonderful salsa made from tomatillos, chilies de arbor and Sesame seeds ( wonderful on everything, esp morning breakfast eggs )
Salsa molcajete : tomatillo, jalapeños, garlic , onion, coriander. Yummm yummm and this one is smooth and mild.
And, of course, a big ole bag of fresh - hot tortilla chips. Dip ‘em in everything…. Even - esp the beans and scoop the rice too. 😁
Mixing and matching highly encouraged, the ajonjoli salsa especially tasty on pork carnitas, heck might be great on Cheerios yayahahahaya yayahahahaya. Fish ceviche tacos, pulled pork carnitas tacos, chips and dip galore. Of course a side of XX w/ lime ( wedges in the foil ) , some Hornitos silver, orange juice etc. all recommended.
All this available off the shelf / food court of local large Mexican food stores ( this from Vallarta). This is basic and affordable fun. Bring the whole family, everyone having fun , picnicking, spending quality time together makes for priceless memories.
As you can see in the picture ( beans and rice plus initially there was two pieces of pork carnitas yayay yayayay yayay ) , the hammer couldn’t wait for the photo op to end . When you are eating food this tasty, it’s hard to be down in the dumps - depressed…. With that big “ yummm yummm “ smile.

Ima gonna try to duck the upcoming showers and take a bunch of this up to Hume lake to trout fish tomorrow. If not then , then middle of next week when storms move off. Man … rain and our 105f-110f heat …makes killer breath taking humidity.

Nightly news saying it’s gonna kick our hind ends, possibly you and L.A. basin a little harder than up here. Still saying it’s gonna be major wind and hard rain with lightning ( more forrest fires ? ) and a lot of possible damage. Supposed to start “ here “ around Sunday night ….I’d suspect a bit earlier there where you are.
Yea same thing here… wonder weather saying we’re only going to have 15-25 mph winds and a little over half an inch of rain over the three days.
Angelo the ABC 30 weather man on tonight’s 6 o’clock news painted a dire storm mess , the severity depending upon if the hurricane drops down from cat 2 to tropical storm status when it hits … the major water damage supposedly in the Palm Springs area and then the storm moving up the Central Valley and owens valley. Hurricanes have only hit California like this once in records …back in 1939. Basically I don’t think they know what’s really happening …. Our weatherman saying the winds could hit 70mph with major lightning strikes and hail as it travels up the valley damaging a lot of the raisin and nut crops.
Ima rooting for some good , soaking, manageable,gentle rain and no major winds. A big wind storm from that direction could rip my jacuzzi pavilion to pieces. You are in that odd confluence of the east and west sides of the Sierras…. Hard telling what would happen there … hopefully that storm will lose most of its energy by the time it hits us. For us, rain storms this time of the year are pretty unusual.
We're supposed to have the Mountain Fest this Sat and Sun/ Live bands, food booths, car show and rodeo tehachapimountainfestival.c.... Hope the storm hits late Sunday thru Monday and yes with a slow steady rain not crazy *ss downpour that happened last Sun night

Some of the network media outlets are “ hyping “ the big bad storm …but wonder weather, weather channel aren’t showing much more than a little wind and some light - moderate rain.

This looks like a lot of food … but the variety makes it possible to have it for lunch, dinner the same day and the leftovers the next day lunch. Some of this doesn’t keep well so you have to get to it. We get about 6 meals out of it ( 2 X 3 ) and the salsas last a long time in the fridge…. I eat salsa on my morning eggs, and a whole host of other food ( I put that chit on everything yayahahaha ) … including easy , no prep , salsa and chip snacks. This type of food isn’t expensive and is a good value for the number of times you can use it. other than warming some of it in the microwave, it’s handy requiring no prep . This works nicely in my food rotation ( next off to Asian , French or midwestern or seafood etc ).
That’s just how I use it, your mileage may vary. It’s easy and tasty and portable…. Works well for me, in my home environment.
A lot of this “ is “ very spicy , definitely not suitable for people ( such as yourself ) with intestinal issues.
Yea, make your own style. size with whatever your tummy desires, mix/match - a Taco/Burrito bar, kinda like how you order at Chipotle where you choose the various accompaniments. I'd do that style for kiddos when I was down South - have it all out and they make their own plate💙

Yea I just recently discovered that the bags for my vacuum sealer work for “ boil-in-bag “ use too. You are on another level with that type of cooking brother . Put your marinade and meat in the bag and draw it down in a hard vacuum for a penetrating marination, then take it out of the fridge and pop it in boiling water to finish.
So … looking at this, did you cook the rice “ and “ meat in the bag together or does the marinade make it look like that ?
Ah …. Got it. When you are boiling, what do you use to keep the bag off the bottom of the pot ( like a steamer sieve ) or do you have a special biab set up.
I checked it when immersed it to see if I needed to place something to keep it off the bottom, but it kinda floated a bit. I also used foil over the stock pot to keep the heat in
Yea, its was very juicy/flavorful. I've used the Immersion water bath cooker for several years, cooking a wide array of proteins. There's a ton of info on the Web of time and temps, and not too pricey either 😂

The first edge of the hurricane just hit us half an hour ago … very little rain so far but lots of thunder and lightning and enormous wind storm. First the AG dust storm was so thick we couldn’t see our neighbors… then It hit us …. threw someone’s garbage all over my back yard and tore my jacuzzi pavilion all to pieces. It hit fast and seems to be gone right now.
Radar not showing much of anything more coming right now. Main rain supposed to hit tomorrow and tomorrow night. The news said the concert - fest was canceled. That would have been fun.

Oh crap, about the Pavillion 😔 They were setting up stages for the live bands across from my office, then they covered up when it rained, then later today just took it all down.
On my hike last night thru the park, there were dozens of tents set up for the vendors who were supposed to open this am. So sad that the rain shut all that down 😭

We keep 3 - 4 extra sets of screens and rip stop canvas tops on hand all the time. ( The exact right model is hard to find, and when you really need one, the factory is always out of stock it seems like ) no biggie, I can’t replace them myself anymore, but I can get a couple buds to come over, it’s an easy job.

That dang storm is gonna circle around and hit us again this afternoon or evening. A little bit more rain. We only got .16 inch’s. The raisin farmers are out on their knees in the fields, thanking the gods, for not washing away their annual crop. There was a large number of raisins laid out on paper all over the Valley here. It would’ve been a catastrophe for a lot of farmers.

The last flood was when it got to down 17 up here, and me being a Hawaii boy, didn't know about letting the faucet slow drip and keep thermostat like at 35 degrees. So back then we couldn't even use the office and a local orthodontist let us use his office for like 3 months while office was worked on

When our kids were little we would occasionally go all out with a food driven theme. For example, on Fiesta night, we would prepare platters of Mexican food, put a brightly colored Mexican blanket on the table, play latin music, and hang a pinata outside for the kids. Loads of fun, and always lots of leftovers.
Carnitas have always been my favorite, so you can bet that we had loads of them, and I had a friend that made his own fantastic salsas that he shared with me. Lots of great memories.
Last week my wife was wanting to go on a picnic, but the 100 degree temps were to hot for me to tolerate. Instead, we spread out a checkered table cloth, pulled oit the straw paper plate holders and paper plates, and dug into fried chicken, potato salsad, corn on the cob, iced tea, etc. All in air conditioned comfort.

The hammer is plagued with terrible lumbar back pain , she loves her hemp derived delta 8 , Thc-P , thcV and “ delta 8 - thc 9 - thcP combo “ products. I’ll have her load up a shopping bag and bring it with her. Yayahahahaya yayahahahaya. I like them all too, but fair warning delta 8 is a laugh factory. I too gravitate to Carnitas and smoked BBQ pulled pork but thats all good stuff there I like. Kind of as you said its in the rotation of asian etc. to Mexican. I've said it before its all in the rotation from Waffle House to the best sashimi for me.
Ironically I have been gearing up for making a Torta sandwich these past few days. Getting all the fixings including few salsa's to go with it. I've had some good Torta's in Mexico City and Chicago and can make a good home made one it looks like. A fair amount of Mexican, Salvadoran, and Argentine stores in the twin cities.
Sashimi came first for me in Japan in 1975 and it wasn't until the 1990's I had Ceviche for the first time in Mexico City. To die for. I cant quite replicate yours here in the twin cities but man that looks good.
Ima kinda lucky because we have a “ huge “ number of ethnic restaurants here . 1.2 million population in the metro and most of it is Latino and Asian. We have Asian buffet’s here , all you can eat seafood extravaganza , that would blow your mind. It’s all Asian, middle eastern , Indian and Mexican restaurants of course. When you are like us ….. no sex so food replaces it ( yayahahahaya) …. Ima lucky to be living here. 😂😂😂
You bet brother Campsoups, Chicago has been famous worldwide for decades for its wonderful ethnic dinning . Deep dish pizza, those infamous. Chicago style hotdogs, . Those long winters when the Hawk is flying … foodie is at its best too. Chicago style hotdogs is one of the dishes in my meal rotation. I’ve got my own dog and bun steamer. In the foodie magazines ,Chicago always rates in the top two or three. It’s interestingly different than out here in the far west, but wonderful and way more refined.
Camps, I didn’t see any of those dishes on the menu the last time I was in a Perkins.
Seriously, I traveled for work for years and it is amazing how ethnic restaurants and types of dishes have proliferated across the country. Here in the NW we still lack the quality of Indian food you can find in Canada, the UK, and obviously in India, but our foodie culture means that we have many other options to choose from.
My wife was born in North Dakota, and I used to tease her that she grew up thinking that cream of mushroom soup was a spice. Not so anymore
But you can always get pigs in a blanket at 3 in the morning at Perkins after the bars close lol.
I did a lot of travelling in work too and lucky to have sampled so much domestic and international food.
Indian food is in the mix a couple times a month with wife and I.
I had some great Indian in Nottingham UK. But also good was fish and ships from a side street vendor wrapped in newspaper eating it in a busy alley after a night of pub hopping.

One thing since entering this rodeo of PCa, is that a good meal is such an important part of keeping that smile fresh! Doesn't matter how, where, etc., but a happy stomach and taste buds certainly brings comfort and smiles!
