This dish is a favorite at the Old Spaghetti Factory , but kinda expensive. . You can reproduce this at home fairly easily and get “ exactly the same “ results as at Spaghetti Factory for way less cost.
You’ll need :
Spaghetti
Butter
Minced and chopped fresh garlic
Mixed Myzithra and romano grated cheese ( small tubs of each are available in local supermarkets )
fresh shiitake and cremini mushrooms.
Cook the spaghetti to “ al dente “ firmness … .
Brown the butter , swirling the pan, spooning off the foam and chunks
Sauté the sliced mushrooms ( equal parts of both kinds ) in minced - chopped garlic in butter, use more mushrooms than you expect you would need , they kinda disappear.
Put the spaghetti into a strainer in a bowl, pour on the brown butter, put in the mushrooms with the garlicized butter, and sprinkle in some 2 cheese blend and toss like a salad. Put it all in a bowl and pour on a little more of the browned butter + garlic butter and toss again. Sprinkle a lot more mixed cheese on top as a garnish.
