Really nice low calorie veggie lasagna!

Sharing because this was really nice - and easy to make! I added in a layer of defrosted frozen spinach mixed with the remainder of the creme fraiche just to add a it of variety in the middle - and I used cherry tomatos rather than plum because I had a bunch in the fridge.

But otherwise I just followed the instructions. Made four decent sized portions - and met with the boyfriend's approval despite his suscipions about the creme fraiche.

Ooh now I think creme fraiche is a great idea, never thought of that ! Nice one, thanks, and I will pop it into the Larder! x
