I'd just eat it as normal, with whatever you normally have with it. Just limit the portion size.
To reduce the calories, roast it on a wire tray so that the fat drips away. Near the end cut the fat and skin off and blast the life out of them under a grill. You'll end up with less fat and crispier crackling.
I had roast pork today at the local carvery - generous helping of veg and small helping of potato & gravy, apple sauce, no dessert....and the crackling (very high calories) is for the dog!
Any cold meat will be lovely with a salad for lunch.

I like to trim off the skin and most of the fat and cook it in a slow cooker with a BBQ marinade to keep it moist and succulent 😊 Look up Pulled Pork recipes
I love my slow cooker - pork joints work really well in it. Because they simmer away for hours the meat is very soft and tender. Throw in loads of veggies and some spice (Chinese five spice works for me) and serve with boiled rice. Yum
