Hello everyone, hope you are keeping warm and having a wonderful weekend so far!π€
Last night I made lavender cake inspired by Kitten-whiskers lovely memory of Norfolk lavender and her love for Nature. This is my virtual cake for you Debs, hope you enjoy it. ππ
Recipe:
1. Mix 1 cup of gluten free flour (I used buckwheat mixed quinoa and flaxseed flour) with 1 tbsp of baking powder in 1/4 cup of coconut oil, 2 tbsp of cane sugar and 1 tbsp of apple cider vinegar .
2. Boil 1 cup of cashew milk, 1 tbsp of lavender flower buds with 1 tsp of lavender and vanilla extract.
3. Blend well mixed flour with liquid and bake at 180C for 25 mins. Let it cool down.
4. In a medium heat pot, heat 300ml of coconut milk with mixed well 2 tbsp of starch, 1 tbsp of lavender flower buds and purple potato powder to give the lilac color. Stir well and let it cool.
5. Pour the paste on top of the baked cake and refrigerate for few hours.
6. If you like decorating your cake like me, they have vegan vanilla bean frosting ready made to create any frosting shapes you like on your cake. π
This is very fragrant and mildly sweet cake that can fill your kitchen with lavender, vanilla aroma and so delicious to enjoy with a nice cup of lavender tea. ππ

I dropped off the rest of the cake to my parents as I kept 2 slices for myself and they were happy to have vegan dessert after their dinner today. They probably call my aunt over to share so I assume this small cake is gone by now. ππ

I love flowery treats and this is very fragrant, refined palette to enjoy. I saw some photos how lavenders are very prominent in England, so beautiful and relaxing to look at. Rosemary is so great in many dishes and did you know just rube the oil in your hand and inhale every day can help with your memory. Dilute the oil with water can be a natural pesticide for plant also. ππ

Yes the Greek, the alchemists are so great discovering many holistic ways to treat many ailments back then. I do have a bottle of Rosemary oil, well I have a collection of many concentrated oils like lavender, myrrh, rose, orange blossoms, French lime, cedar wood, basil, vanilla beanβ¦ to mix my own fragrance and room scent diffuser for the house. Itβs quite interesting and fun when I can mix things to my taste with base, middle and top note. I got many glass bottles for that too. ππHow come you donβt grow rosemary in your garden if I may ask? π€
Yes growing these things can be quite tricky. Iβm not a gardener so I donβt know much. I always thought they do quite well in warm and humid weather but must be something need to be done with soil. π€
I can only think plenty of YouTube video clips they might talk about Rosemary planting will prepare you better for next time if you decide to give it a shot again. For now, all your delicious fruits trees are taking up your time and effort as they respond well under your care. ππ
