Yesterday, I went through my kitchen cabinet and I found a bag of organic dried figs about to expire so I decided to make fig jam. (Organic dried fruits can oxidize fast and short expiration date). I love having homemade jam with oatmeals and avocado.ππ
Fig jam recipe:
2 cups of chopped dried figs, 1 cup of freshly squeezed orange juice, 1 cup of water, 2 tbsp of orange zests, all cooked in pot until juice vaporized most of it. No sugar/sweetener needed. Use food processor/blender to blend well into paste. Keep in airtight mason jar in the fridge to last longer.
In addition, I used part of fig jam to bake Fig Newton Bars. ππ
Fig Newton Bar recipe:
1. I used a standing mixer to blend: 1 cup of gluten-free all purpose flour, 1/2 tsp baking powder, 4 tbsp vegan butter, 2 tbsp maple syrup (optional), 60 ml cashew milk, 1tsp of orange and vanilla extract.
2. Divide into 3 balls of dough, covered in bowl and let them sit in the fridge for about 30mins at least. Use roller to thin out the mixed dough. Spread jam in the middle rectangularly and fold 2 sides in. (I find using non-stick silicone mat is easy to fold, pic included in my reply).
Bake at 375F for 15-20 mins. You get your delicious fig Newton bars/cookies. Itβs perfect to pair with a nice cup of tea or a glass of milk. ππ
