Since Iโm on gluten-free vegan diet, I baked Chickpea Pumpkin Blondies with dark chocolate chips. ๐ฑ๐ฅ๐
Main ingredients: chickpeas, pumpkin purรฉe, 2 tbsp of maple syrup, cinnamon spice, baking powder all blended in food processor and added pecan and dark chocolate chips as final step. Baked at 350F for 30 mins and you can have your gluten-free vegan treats with bonus the kitchen smells amazing. ๐๐
I love to have with my homemade cashew milk (soak raw cashews overnight, rinse and blend with water) sprinkled with cinnamon spice. ๐๐ฅ
Todayโs meal: Mixed sliced mushrooms, bitter melons and carrots Soup ๐ฅฃ since I get my treat from chickpea pumpkin blondies. ๐๐

Homemade Cashew milk is now my top favorite milk mixed so well with turmeric and pepper I drink every night now. ๐๐
My parents enjoyed these treats too as I try to get them stay away from snack shops. You are master chef at baking Jerry and Iโm slowly progressing! ๐

Yes, we made soya milk over there too sooo good and made soya dessert with ginger sugar syrup(eating hot or cold) too. ๐๐
Basil seeds are very popular over there just like chia seeds western use more.
Tapioca balls: have you had the taro tapioca balls? They are trendy over here in CA, so delicious with milk tea.
I donโt think I had barley tea before ๐ค.
My parents had to cancel their trip to VN now as Covid is crazy over there, all countries like Southeast Asia, Philippines too. You and your family take great care! ๐ค
I think your kids will like very much with these tapioca balls made from sweet potato starch and taro, they made into yummy dessert over here. Iโm sure you can make it easily if you want to. ๐๐
I see Barley is gluten so I canโt have it now but I looked up very delicious and popular in Asia.
Enjoy your home made pumpkin seeds make such great snack. ๐๐ If you can roast well, eating the skin of the seeds too is good for you.
Yes, Itโs the Covid red zone now and vaccines are not available to all. Thatโs what I told my parents too, wait till next year and travel, right now is not okay.
