I don't know how many times I've made this now but I absolutely love it, it has to be one of the best low fodmap vegan recipes I've made. The low fodmap way of eating is for those that suffer with IBS but of course anyone can eat low fodmap recipes.
Tips: I cook the quinoa in a saucepan whilst making up the rest of the recipe and you'll need 2/3rds cup of dry quinoa.
I cook the carrots on their own in the oven for around 10 minutes as they take a lot longer than the rest of the ingredients.
I mix everything together in one bowl to serve, I don't serve any of it separately i.e. I mix the quinoa in with everything else.
