Roasted vegetable with harissa

This was very nice.

I roasted cubes of aubergine,tofu carrot, red pepper, onion, tomato sprinkled with harissa. Near the end I put some butter beans in as I didnt have any chickpeas.

I served it with cous cous with chopped up mint and a tahini dressing. (Tahini and water, just enough to give it a thinner pouring consistency. We really enjoyed it and it was quick and easy.
