Hi, for dinner tonight I fried some tofu until it was firm and put it to the side. I then stir fried some vegetables and made the basmati rice coconut rice by using some coconut milk from a tin which was left over.
I served this with some Thai cakes which were grated garlic, ginger, lemon zest, carrot, butternut squash, onion and chilli. I made a gram flour batter added the butternut squash and carrots etc and fried them in coconut oil.
Yesterday when I was famished there was a co op nearby and I found some sweet corn Thai cakes, they are delicious if you fancy trying them and they were what inspired me to make these Thai cakes π
