Can anyone recommend a gluten free flour that is suitable for making pastry.
My Mother in law is not having any luck with coconut flour and I wasn’t sure what to recommend. She particularly wanted to make an apple pie. It’s gone wrong a couple of times so I said maybe it’s the wrong flour 🤷🏻♀️

Now the best gluten free shortcrust pastry that I've ever made uses half gluten free pastry mix with half mashed potato left in the fridge overnight. And just use a shortcrust recipe for pastry and use the GF flour and your egg replacer and your mother in law should be pleased.
The problem with coconut flour is it is much more absorbent than other flours so you often use 25g instead of 100g other flours so it is a very interesting to cook with.
Due to your reply I’ve now recommended that she uses Doves which is handy as she has a Tesco in walking distance and I see you can buy it there. I’ve struggled with coconut flour being super absorbent so wasn’t surprised when she said even the apple filling had dried out. Poor her she took it to a dinner party, apparently it looked fabulous but tasted awful. She was glad when I said it wasn’t her and that coconut flour is tricky!
