Gluten free bread

I'm going to have a go at cutting gluten out of my diet as I'm almost sure that's why I'm having continuing gut issues.

Can anyone recommend a decent vegan gluten free bread recipe that tastes good.

Also, does anyone know where I can get a comprehensive list of what foods contain gluten. I mean by that ingredients and not ready made manufactured foods.

Appeciate all and any help.

Lol good luck. Follow jerrys advice as he is star baker when it comes to gf bread. Mine was awful first time. It squeaked when I ate it. (Like polystyrene) had to bin it too! 😂

Agree, Jerry has given some very good advice.

Hi Alicia, for gluten free vegan bread I'd recommend that you get some egg replacer as egg whites replicate gluten really well as it is plant based cellulose so a prefect binder for GF bread. If you don't buy a GF bread flour I'd also buy some xanthan gum and use sparingly like 1 or 2 teaspoons to 500g gf flour.

Ps here's a list now it depends on how sensitive we are to gluten as many Eno's can be wheat derivatives especially maltodextrin dextrose sucrose aspartame and caramel colours. Even citric acid can be a wheat derivative.

Thank you very much Jerry for the very comprehensive reply. This has given me plenty of food for thought. I do have egg replacer but not the Xanthan Gum so I'll get some of that. I'm almost convinced now that gluten is a problem with me.

You're very welcome Alicia, now did you know that oats are a member of the edible wheat family and contain oat gluten avenin and not all countries class oats as GF because all coeliac experts agree that oats have the capability of making coeliac ill. So coeliac adults are advised to introduce them slowly to build up a tolerance and not to eat more than 50g or 1- 3/4 oz per 24hrs and coeliac children 15g or 1/2oz.

There is a grey area for foods with me where some food labelled as Gluten Free contains too much allowed gluten for my body so I always read labels.

I hope that a gluten free diet works for you and the same goes for your GF sourdough bread.

I've got oats but did buy somexextea oats that were gluten free. I have to say quite a long time ago I was surprised to find that oats had gluten in them. When I have oats I only have 30g each serving but don't have oats every day.

I have a Pancreas blood test this Thursday so hopefully that'll show something.

I'm looking forward to making the bread.😀

I've been thinking Jerry, what ingredients do you use and how much for your bread? I've looked at quite a few recioes and see th ere are a myriad of different flours.

I honestly think I have an intolerance to gluten.

Hi Alicia, I'd buy some GF bread mix like Doves farm the white rises better I find.

Here's a link to Doves farm and how to adapt the recipe for a vegan diet by replacing egg whites with gram flour. You could also use egg replacer.

2 egg whites (or 20g Freee Chickpea Flour + 60ml water)

6 tbsp oil.

1 tsp vinegar.

2 tbsp sugar.

1 tsp salt.

400ml water.

500g GF White Bread Flour.

2 tsp Doves Farm Yeast.

The reason that you want to use a mix of flours is because wheat flour has a much lower gelatinisation (cooking temperature) then GF flours hence a mix works best.

Be careful which yeast you use as some of the fast acting tones contain wheat. I use Allinson dried active yeast in a yellow tin which I buy from the supermarket. And I leave it to wake up while I get the other ingredients ready.

I'm sorry of you are intolerant to gluten as I know what thats like so good luck with your bread making and rolls are easier to make than a loaf.

Thank you so much Jerry, I really appreciate your help and support. Although I haven't had any tests for gluten intolerance it's the way my body is behaving makes me think I have.

I'm going on holiday next week so probably won't have chance to get all of the ingredients until I'm back, wouldn't it be easier if supermarkets so everything without having to go online. I'll just rethink my lunches when I'm away.

Here's what the coeliac society of Australia say about oats as they have a different stance to the UK and have the highest standards in the world over Gluten Free testing and labelling:

The reason some coeliac appear to be able to tolerate pure or GF oats is because oats are naturally low in oat gluten so a small amount seems be tolerated by some coeliac. I see pure oats as a low gluten food and my body confirms this.

I think this is well worth bearing in mind if you are having ongoing stomach issues as I'm a great believer in 'us' the consumer being aware of what we are really eating.

The above MRS Manjula recipe i mixed some flax meal , chilly pepper, Cilantro dried.

thinking i should have added a little baking powder - the best was no need of any parchment paper.

I also used brown rice flour to roll the dough and it helps greatly like the recipe says it does not stick to the rolling board.

Even better you can make many and then put them in the skillet to cook one by one

I usually put a lid on top so that the steam makes it soft.

Both are very good and easy to make
