We had loads of carrots so we had these carrot fritters for tea. They are made of carrot, garlic, onion, chilli, lemon, fresh parsley and ginger. I also grated in some creamed coconut from a block. They are held together with gram flour which I think works very well as I find vegan vegetable burgers and fritters have a tendency to fall apart whilst cooking and gram flour seems to do the trick. We had them with potato wedges and salad with home grown lettuce π
(The carrot mixture in the bowl is the mix before it was cooked).

Gorgeous fritters Ali, gram flour is a fantastic binder and it's healthy...I'd have thought that strong wheat flour would bind well because of the gluten.
In fact Chinese supermarkets sell jars of gluten...π±
Hi Jerry, Thank you, i love these fritters they are quick and easy and you can throw anything in cooked or raw and it seems to work. Yes, gram flour works very well better than anything else I've tried. π
