Hi everyone, After Debs posted a photo of her lunch yesterday it made me fancy a nut roast.
I fried onion, half a red pepper, garlic and mushrooms, added miso and dried herbs (parsley, basil and sage).
I added blended nuts (mainly almonds as I had some to use up) brown bread and vegetable stock.
Mixed it all together and roasted it in the oven for about 35 mins. Which was about the same amount of time for the roast potatoes to cook.
I also made a gravy by boiling carrot, mushrooms, grated beetroot, garlic, onion and marmite. When all the vegetables were soft I blended it.
Iβve made lots of nut roasts but this was probably the nicest. I think adding the red pepper was what gave it such a lovely flavour and with the beetroot gravy it was delicious π
I had it with carrots, roast potatoes, peas and stir fried cabbage and onion.
