My average vegan week πŸ„πŸ₯¬πŸ₯¦πŸ₯•πŸ₯‘πŸ†πŸŒπŸπŸ‹

After BridgeGirl posted about trying 30 different vegetables in a month, I decided to do a little experiment to see how many different vegetables we eat in a week. I made a note of what we had between last Sunday and Saturday and this is how it went. I think next week will look pretty similar to last week so I am going to make an extra effort to try and find other vegetables to give more variation. Although there was more variation than I had expected so I was pleased about that.

Potatoes, swede, carrots, peas, kale, mushrooms, onion, leek, parsnips, butternut squash, seaweed, lettuce, green pepper, red pepper, spinach, avocado, bean sprouts, cauliflower, brocolli, aubergine, tomatoes, chilli, garlic, root turmeric and ginger.

Chickpeas, black beans, puy Lentils, yellow lentils and cannellini beans.

Walnuts, Brazil nuts, cashews, pecans, almonds and pumpkin seeds

Grapes, tangerines, Figs, Asian pears, bananas

Herbs and spices

I'm going to have to do that. I won't do it until I'm eating better though. I have a feeling that pot of Vegan Curry I had last week may have been off as I've had nausea, a bit of an upset tummy and loss of appetite ever since, at least I won't put on any weight eating naughty treats. ;)

This is great Ali and here's mine,

Potatoes, broccoli, kale, mushrooms, tomatoes, onions, garlic, carrots, cauliflower, bok choi, chilli, sweet peppers, butter beans, ginger. Apples, raspberries, bananas, sultanas, currants, linseeds, sesame seeds, pumpkin seeds, chia seeds, almonds.

I but organic if I can as well, a great post Ali. πŸ˜€

This weekend (Fri night, Sat & Sun)...

Wholewheat pasta, mushrooms, vegan bouillon powder, garlic, black pepper, almond milk, bramley apples, dates, prunes, oats, turmeric, blueberries, banana, cashew nuts, brazil nuts, carrots, swede, lentils, chick peas, B12 supplement, ground hemp, cumin, coriander, salt, spinach, peas, chick peas, onions, leek, wholegrain bread, peanut butter, water, pineapple, dried apricots, raspberries, quinoa, brussel sprouts, broccoli, dark leafy greens, dark chocolate, talisker whiskey, pumpkin seeds, chilli and green tea.

That's slightly over 40 ingredients.

Some of the ingredients might surprise the andyswarbs watcher... I am experimenting with increasing nuts and various other things. My health has been so good recently I have decided the time is right to widen and see if I get any arthritic reactions. So far no reactions...

Peanut butter is tricky for me. I've found that eating freshly ground is fine, but if I buy some that has some oil that's separated out, it can taste a bit rancid and is probably not good to eat. Has anyone else noticed this?

Hi, it’s never occurred to me so I will keep an eye out for that. We buy the whole food organic range.
