I made pasta sauce by roasting and then blending butternut squash, green pepper, yellow pepper, onions, carrots and garlic
I added hot water, miso paste, nutritional yeast, Dijon mustard, 2 chilliβs, turmeric, salt and pepper and heated it for a few minutes.
Usually I blitzed up cashew nuts, nutritional yeast and garlic salt and sprinkle on top but this time I grated some violife Parmesan to give it a go and it was actually quite nice and Iβm not that keen on vegan cheese.
It was very nice and a real comfort food. Only problem was that there wasnβt enough of it! π
