I saw a recipe for apple crisp and will be trying it out but as I wanted a raspberry tart and I made this, as I'm trying to use only healthy ingredients so it is not only a treat but it hits the mark nutritionally.
The base is 75g ground almonds, 25g coconut flour, 55g coconut oil, 25g coconut sugar blitzed in my food processor spread in a baking tray and sprinkled with a thin layer of sesame seeds and blind baked for about 20 mins. The coconut sugar makes it go a very dark colour so for a golden colour you could use maple syrup instead.
The topping is 6 strawberries boiled with a little water then thickened with chia seeds When the base has cooled spread the strawberry jelly/jam on top and add the washed raspberries I used about 200g, then I sprinkled flaked almonds on top with a few more sesame seeds. Sesame are a very good source of calcium as well as being great to eat.
You can see how well the coconut binds the other ingredients so the base cuts nicely, so coconut oil is great for gf baking.
