I've been experimenting with using coconut oil for baking and really like it so here's a flan I made using ground almonds, quinoa flour, gf flour, sesame seeds and chia seeds totalling 100g with 50g coconut fat parsley and seasoning blended and I put it in a baking dish and flatten it with a potato masher as its quick and easy.
I blind baked for about 15mins while I made the topping.
I gently cooked white onion and sliced chestnut mushrooms with coriander, cumin, ginger, turmeric + sea salt and black pepper until they were soft then I added coconut milk and some chia seeds which I'd soaked in hot water and added this to the veg and mixed thoroughly, as I bake gf bread and use xanthan gum I added 1/3 tea spoon and it really helps to thicken up the topping while it bakes.
I had it with some gorgeous baby new potatoes and curly kale followed by strawberries with soy cream...π
